You should definitely see the old town's of Tallinn,Vilnius and Riga. Riga is a better choice as there are much more tourist attractions like the occupation museum which is a must see. Generally just walk around the old town and you will be pleased. In latvia there are nice beaches in Jurmala, which is sea resort in latvia. You could take a boat ride across the river Daugava which is pretty nice. I can give you more information about Latvia than Estonia or Lithuania because i'm from latvia.
